Before we left for Duckfest, I thought that I’d want to open our bottle of Armagnac as soon as we got home, just to compare. Then by the end of Duckfest, I was so thoroughly sated on duckfat and Armagnac that I wasn’t sure I’d be able to face either for a long time. Now, even after the space of just a few days, reading about it makes me hungry again. Perhaps the Armagnac will get opened this weekend…

Cool, thanks for the info! The place where we bought our pig, Hidden Meadow Ranch in Mount Vernon, claims to raise ducks as well but I don’t remember what breed. I’ll do some checking.
